- ¼ pound Butter
- 2 cups onion (coarsely chopped)
- 1 cup celery (coarsely chopped)
- 4 teaspoon chicken base
- 2/3 cup flour
- ¼ cup old bay
- 1.5 quarts whole milk
- 1.5 quarts heavy cream
- 2 pounds lump crab meat
- ½ cup sherry
Melt butter on medium heat
Add onion, celery and chicken base; cook and stir until softened
Add flour and old bay; wire whip to blend well
Cook for 1 min.
While whipping constantly, add in cream then milk. Gently add crab meat.
Lower heat and simmer for 22 mins stirring occasionally with spoon
Add sherry; simmer for an additional 3 minutes
